This is one of my go to cookies when I am pressed for time and I am craving for a sweet cookie. It is so easy to make and only requires 3 ingredients which are tahini, rolled oats and dates š And if you do not have tahini, you can use any nut butter or seed butter and the cookies will be just as perfect and satisfying š¤¤
From the ingredients, you know these cookies are going to be healthy as they are packed with complex carbohydrates, good fat and are naturally sweetened with dates š These cookies are also dairy free, oil free and as with most of my baked goods, vegan friendly. I hope you get a chance to try these cookies š

Makes 26 cookies
Ingredients
- 1 cup dates, soaked in hot water for at least 1 hour;
- 2 cups rolled oats;
- 5 tbsp tahini (I used a mix of white and black tahini); and
- Water.
Method
- Preheat the oven to 170 degrees Celsius and line a baking tray with baking paper;
- In a food processor, place the soaked dates (with the water drained and saved for later) and process until a thick paste consistency is formed;
- Then, add the rolled oats and process until well combined. The mixture should resemble cookie crumbs now;
- Add the tahini and process until well combined. The mixture should start to resemble a cookie dough now;
Add tahini to the date-oat mixture. - Add water 1 tbsp at a time to the mixture and process until a cookie dough is formed;
- Once a cookie dough is formed, form into bite sized cookies and place on the baking tray and repeat until all the dough is finished;
Cookies ready to be baked. - Place the baking tray in the oven and bake for 20-25 minutes or until slightly darker than golden brown if you prefer your cookies on the tougher side;
- Remove from the oven and allow to cool completely;
Cookies fresh out of the oven. - Store in an air-tight container for up to two weeks; and
- Enjoy with a cup of tea/coffee š
