3-Ingredient Tahini Oatmeal Cookies

This is one of my go to cookies when I am pressed for time and I am craving for a sweet cookie. It is so easy to make and only requires 3 ingredients which are tahini, rolled oats and dates 😍 And if you do not have tahini, you can use any nut butter or seed butter and the cookies will be just as perfect and satisfying 🀀

From the ingredients, you know these cookies are going to be healthy as they are packed with complex carbohydrates, good fat and are naturally sweetened with dates πŸ™‚ These cookies are also dairy free, oil free and as with most of my baked goods, vegan friendly. I hope you get a chance to try these cookies 😊

I hope you enjoy this recipe as much as I have. As always, please let me know what you think of this recipe.

Makes 26 cookies

Ingredients

  • 1 cup dates, soaked in hot water for at least 1 hour;
  • 2 cups rolled oats;
  • 5 tbsp tahini (I used a mix of white and black tahini); and
  • Water.

Method

  1. Preheat the oven to 170 degrees Celsius and line a baking tray with baking paper;
  2. In a food processor, place the soaked dates (with the water drained and saved for later) and process until a thick paste consistency is formed;
  3. Then, add the rolled oats and process until well combined. The mixture should resemble cookie crumbs now;
  4. Add the tahini and process until well combined. The mixture should start to resemble a cookie dough now;
