Meal Prep – Curried Fried Quinoa with a Creamy White Sauce

If you don’t already know, I LOVE quinoa. Although it’s not technically a grain, it is my grain of choice. I have it instead of rice. So, it’s a staple in my household 😊

I also love making stir fries especially during the week when I want to make a quick dinner after work. So, I tend to make fried quinoa quite a bit as I can include my grain of choice, quinoa, some protein to make sure I get my daily intake of protein and lots of veggies to make sure I meet the recommended daily intake of 5 servings of vegetables and for the fibre to keep me fuller for longer.

So, today I would like to share with you my curried fried quinoa recipe that I make at least once a month. I have kept the number of vegetables to a minimum in this recipe, but feel free to add more vegetables or swap the kale and peas for your favourite vegetables. I have used scrambled eggs as my protein of choice in this recipe, but you can use tofu for a vegan option or chicken breast if you are after some white meat. If you like red meat, I would suggest using minced lamb as it goes really well with the curry flavour of this fried quinoa. Oh, this recipe also make a great meal prep and keeps in the fridge for up to a week and heats really well in the microwave 😊

Yummy curried fried quinoa with creamy sauce πŸ˜‹


Serves 4


For the scrambled eggs

  • 4 free range eggs (or 300g firm was tofu for a vegan option, 300g sliced chicken breast for white meat option or 300g minced lamb for red meat option);
  • 1 tbsp olive oil; and
  • Salt & pepper to taste.

For the fried quinoa

  • 1/2 tbsp olive oil;
  • 15-20 fresh or dried curry leaves;
  • 3 dried chillies, sliced;
  • 3 cardamom pods, bruised;
  • 1 large red onion, sliced;
  • 2 cups quinoa, cooked;
  • 4 cups kale, shredded;
  • 1.5 cups frozen peas;
  • 1 tsp curry powder (or more);
  • 1 tsp san elk vegetable stock or salt to taste;
  • 1 tsp ground cumin;
  • 1 tsp ground turmeric; and
  • 1/2 tsp ground cayenne pepper (or taste).

For the creamy white sauce

  • 1 cucumber, sliced into small pieces;
  • 1 tsp freshly squeezed lemon juice;
  • 1/4 cup Greek yogurt or natural coconut yogurt for a vegan option; and
  • 1/2 tsp ground cumin.


For the scrambled eggs

  1. Place a wok on a medium high heat. Once the wok is hot, pour the olive oil in the pan. Once the oil is hot, crack the eggs in the wok and add salt and pepper to taste;
  2. Scramble the eggs to your preferred consistency and set aside in a bowl.

For the fried quinoa

  1. In the same wok, pour the olive oil. Once the oil is hot, add the curry leaves, dried chillies and cardamom and fry until fragrant;
  2. Then, add the diced onions and fry until the onions caramelises. If the onions start to stick on the wok, add some water;
  3. Add the kale and stir fry until it starts to wilt;
  4. Then, add the cooked quinoa and peas and stir fry until well combined and the peas has cooked;
  5. Now, add the curry powder, vegetable stock/salt, turmeric and cayenne pepper and stir fry until well combined. Make sure you taste stir fry and season and/or add more curry powder if your prefer it spicier;
  6. Once the stir fry is well seasoned and spiced, add the scrambled eggs in and stir fry for another 1-2 minutes; and
  7. Your curried fried quinoa is now ready to be plated.

For the creamy white sauce

  1. In a medium, mix all the creamy sauce ingredients until well combined; and
  2. You can add salt if you like it is saltier.

For the plating

  1. Plate the curried fried quinoa in your favourite bowl/plate;
  2. Top with some of the creamy white sauce and enjoy 🀀
  3. If you are meal prepping, make sure you keep the creamy white sauce separate to the curried fried quinoa as you don’t want to be heating the sauce;
  4. Stores in the fried for up to a week.
