Happy world chocolate day, everyone π To celebrate world chocolate day, I would like to share with you my easy, fudgy and moist chocolate cake recipe. I have been making this chocolate cake for almost as long as my baked cheesecake recipe now, so it is my go to cake when I want to make something easy yet delicious and decadent. It is super moist, fudgy and also goes well with vanilla ice cream. It makes a good birthday cake for those who love a good chocolate cake. Serves 10-12 people
Ingredients
For the cake:
- 200g butter, melted;
- 2/3 cup dark brown sugar;
- 3 eggs, lightly beaten;
- 2 cups self raising flour, sifted;
- 1 tsp baking powder;
- 1/3 cup cocoa powder, sifted;
- 1 cup Greek yogurt (full fat or light will work well);
- 1/2 cup milk of your choice (I used soy milk as this is the milk we drink at home); and
- 250g dark cooking chocolate, chopped semi-finely;

For the chocolate sauce:
- 100g dark chocolate; and
- 1/4 cup thicken cream.
Method
For the cake:
- Preheat the oven to 160 degree Celsius and grease a 22cm round cake tin;
- In a large bowl, place the melted butter and brown sugar and beat together with a wooden spoon until well mixed. Then add the lightly beaten eggs and beat together until well combined and mixed;
- Then, add the flour and baking powder and mix until well combined;
- Add the cocoa powder and greek yogurt and mix until well combined;
- Finally add the milk and chopped chocolate and mix until well combined;
- Pour the mixture in the cake tin and bake for 55-65 minutes or until a skewer comes out clean when inserted into the cake. Allow the cake to cool;

For the chocolate sauce:
- Melt the chocolate in a saucepan on medium heat. Then add the cream and stir until smooth. Remove the saucepan from heat and allow the chocolate sauce to cool for 5 minutes;
- Spread the chocolate sauce on the top of the cake;
- Enjoy:) This chocolate cake is best served slightly warmed up and for a more decadent dessert, vanilla ice cream goes well with this cake π
