Tangy Israeli Couscous Salad (Vegan, Allergen Friendly)

Another day, another salad for dinner! Honestly, I never get tired of salads for dinner. Some people think salads are just combination of different greens/lettuces and hence, don’t like to have to salads. But for me, salads are a combination of various greens, grains, nuts/seeds, fresh/dried fruits & spices with a delicious homemade dressing. So, my salads are always quite exciting (to me at least), colourful, nutritious and most importantly, delicious. I always keep my salads interesting by mixing up the greens, grains, nuts and dressings that I use 😊 So, I don’t get bored of my salads. This is another salad I made a few Fridays ago for dinner. And I had it with my homemade falafels and some hummus. So much yum in this saladπŸ˜‹

Serves 6-8 people

All the salad ingredients

Ingredients

**For the salad

  • 3 cups cooked pearl couscous;
  • 2-3 large handful of baby spinach, chopped;
  • Handful of fresh parsley, chopped;
  • Handful of fresh coriander, chopped;
  • 1/2 cup cherry tomatoes, quartered;
  • 1/2-1 cucumber, chopped;
  • 1 red onion, finely chopped;
  • 2 tbsp pine nuts;
  • 1 tbsp silvered almonds;
  • 2 tbsp sunflower seeds; and
  • 2 tbsp sultanas.

**For the dressing

  • 1 clove of garlic, finely minced;
  • 1 tbsp tahini;
  • Juice of 1 lemon (3-4 tbsp);
  • 1 tbsp coconut syrup/honey/maple syrup; and
  • Hot water.

Method

  1. Place all the salad ingredients in a large bowl;
  2. In a small bowl, whisk all the dressing ingredients except the hot water until well combined. Add hot water 1 tbsp at a time until the dressing reaches your preferred consistency;
  3. Pour the dressing in the salad bowl and mix the salad until well combined; and
  4. Enjoy with your favourite protein or simply on its own 😊
