Easy Sweet Potato & Chickpea Burger (Vegan, Gluten Free, Meal Prep)

I have been making these burgers for the last few weeks for meatless Mondays and they are SOOOO delicious that I cannot stop making and eating them! These burgers are so simple to make and can be made with items you probably have in your pantry and/or fridge. They are made with sweet potato, chickpeas, garlic and onions and seasoned with worchester sauce, dijon mustard, cayenne pepper, garlic powder, veggie stock and pepper.

I have these burgers with Aldi’s lower carb high protein bun which I love as they are so filling. But you can also have them on its own or with some roast veggies or with a salad. And they also make a good meal prep dish and take less than 15 minutes to make (excluding cooking time) from chopping up the onions to forming the patties. They also keep well in the fridge for up to a week. I make these burgers in the Arifryer but you can bake them in the oven or pan fry them too. Makes 6 delicious burger patties

Ingredients

  • 150g raw sweet potato, chopped and boiled until soft & mashed;
  • 1 x 400g canned chickpeas, drained and rinsed (or 1.5 cups cooked chickpeas);
  • 1 tbsp Dijon mustard;
  • 3-4 tbsp Worcester sauce;
  • 2-3 garlic cloves, minced;
  • Ground cayenne pepper to taste;
  • San elk veggie stock or salt to taste;
  • 2 tsp garlic powder;
  • Pepper to taste; and
  • 1 brown onion; chopped.

Methoz

  1. In a food processor, process everything together (except for the onions) until well combined. The mixture should be able to form patties;
  2. Then, add the chopped onions and pulse a few times until well combined;
  3. Divide the mixture into 6 portions and form into patties;
  4. Airfry or bake the patties for 20-25 minutes at 160 degrees Celsius. Alternatively, you can pan fry the patties with a little oil on a pan;

  1. Wow, these sound fantastic! I plan to try and make these. I am supposed to eat gluten free (tested a weak positive), but it’s hard so I generally slack on the weekend and holidays. But this really sounds delicious! 😊 (I feel for folks who get really sick when they eat gluten 😒)
