Christmas Edition: Healthier Gingerbread Cheesecake Bites (Vegetarian)

Given the year we have all experienced, I still find it hard to believe it’s already December! But for many of us, December is so special as we spend it with our family and friends by celebrating the festive season and winding down after a long year. So, I thought I would sharing some of my healthier festive snack/dessert recipes. First recipe off the rank is my healthier gingerbread cheesecake bites πŸ™‚

These cheesecake bites are very similar to these choc orange and banoffee pie cheesecake bites. But they have the flavours of gingerbread. So, if you love gingerbread, give these healthier cheesecake bites a try. They are super easy to make and are made with just 7 ingredients. The base is made with ginger cookies/snaps and the filling is made with cottage cheese, egg, yogurt, date syrup (or sweetener of your choice), dried ginger and ground ginger. And they tastes amazing! Makes 12 cheesecake bites

Ingredients

  • 12 x ginger cookies/snaps (I used ginger thins from Ikea);
  • 150g cottage cheese;
  • 150g Greek yogurt/kefir yogurt;
  • 1 egg;
  • 1-2 tbsp date syrup;
  • 5-6 dried ginger cubes, diced; and
  • 1-2 tsp ground ginger.

Method

  1. Preheat the oven to 170 degrees Celsius and line a muffin tray with muffin lines;
  2. Place a ginger cookie in each of the muffin cup;
  3. In a medium bowl, place all the remaining ingredients and mix until well combined;
  4. Place two or three tbsp of the cheese-yogurt mixture on top of the ginger cookies;
  5. Transfer to the oven and bake for 20-30 minutes or until the middle is slightly wobbly;
  6. Once baked, allow to cool and place in the fridge to chill for 4-5 hours or overnight;
  7. Enjoy πŸ˜‰
