Lighter Tiramisu (Vegetarian, Meal Prep, High Protein)

Easy lighter tiramisu 🍮 Perfect for your morning or afternoon tea or even dessert. This is one of my favourite snack for afternoon tea and also, one of Dorian’s favourite snack.

It’s lighter and healthier than your typical tiramisu as it’s made with Greek yogurt and cottage cheese. So, it’s packed with protein to keep you full and satiated for longer. And it’s easy to make as the sponge layer is made using your favourite plain sweet biscuits – I used Arnotts shredded wheatmeal biscuits ☺️ So, in total it took me 15 minutes to whip these tiramisu up and it keeps well in the fridge for up to 5 days 😉 Also, if you are looking for a last minute quick & delicious dessert for entertaining, look no further 😋 And Happy New Year, everyone 🎄🎉🥳🎈🎄I hope the new year brings you joy, prosperity & health ❤️💕💕

Serves 4

Ingredients
For the filling

  • 200g vanilla Greek yogurt (you can also use plain or salted caramel or coconut flavoured yogurt);
  • 200g cottage cheese;
  • Sweetener to taste (maple syrup or rice malt syrup); and
  • ***Optional: 4 tbsp protein powder (I used maple syrup whey protein);

For the sponge layer

  • 8 x your favourite plain sweet biscuits (shredded wheatmeal biscuits or Marie biscuits or milk coffee ciscuits or milk arrowroot biscuits or granita biscuits or nice biscuits or any plain sweet biscuits); and
  • 1 cup strong black coffee (I used Nespresso coffee);

For the dusting

  • Cacao powder;

Method

  1. Prepare 4 mini trifle jars or glasses;
  2. In a food processor place the yogurt, cottage cheese, sweetener & protein powder (if using) & process until smooth & creamy
  3. Now for assembly: Dip 1 plain sweet biscuit in the coffee & place in the jar/glass. Do this for each of the four glass. Then, place 50g (~2-3 tbsp) yogurt-cottage cheese mixture on top on the biscuit in each jar. Then, dip 1 plain sweet biscuit in the coffee & place on top the yogurt-cottage cheese mixture. Then, place 50g (~2-3 tbsp) yogurt-cottage cheese mixture on top on the biscuit in each jar;
  4. Place the assembled tiramisu jars in the fridge for at least 4-5 hours for the tiramisu to set (for best result, place in the fridge overnight); and
  5. Before serving, dust with some cacao powder. Enjoy;
