Serves 2

Ingredients

  • 4 tbsp chia seeds;
  • 1/2 cup milk of your choice;
  • 1 cup eggnog;
  • 160g vanilla yogurt (or coconut yogurt for vegan option);
  • Pinch of ground cinnamon; and
  • Toppings: Fresh fruit – I used some fresh mango, cacao nibs, desiccated coconut.

Method

  1. In a medium bowl, place all the ingredients (except the topping) and whisk together until well combined and the mixture is not lumpy
  2. Set the pudding in the fridge for 3-4 hours or overnight to set. The pudding will become gel-like; and
  3. Serve with fresh fruit of your choice, cacao nibs and desiccated coconut πŸ₯₯

Happy making and happy new year,
