Merry Christmas, everyone π β€οΈπ I hope you are having a good break/holiday if you are having some time off. I just wanted to share this delicious high protein and high fibre breakfast that I made for Christmas morning ππ π
If you have some leftover eggnog from your Christmas celebrations, try this delicious eggnog chia pudding!! It was so so tasty, so I will be making it again before we run out of eggnog. Itβs made with chia seeds, eggnog, yogurt, almond milk and ground cinnamon and topped with some fresh mango! Yum π€€ This breakfast is high in fibre and protein, so it will keep you fuller for longer. It also makes a great snackπ π€€π₯³

Serves 2
Ingredients
- 4 tbsp chia seeds;
- 1/2 cup milk of your choice;
- 1 cup eggnog;
- 160g vanilla yogurt (or coconut yogurt for vegan option);
- Pinch of ground cinnamon; and
- Toppings: Fresh fruit – I used some fresh mango, cacao nibs, desiccated coconut.
Method
- In a medium bowl, place all the ingredients (except the topping) and whisk together until well combined and the mixture is not lumpy
- Set the pudding in the fridge for 3-4 hours or overnight to set. The pudding will become gel-like; and
- Serve with fresh fruit of your choice, cacao nibs and desiccated coconut π₯₯

I think Chia seeds are quite tasty and versatile. I’m not a huge fan of eggnog, but if I was, I’m sure this would be delicious! I am a fan of chia seeds π
