If you don’t already know, I am a big believer in prepping my meals for the work week ahead. Sometimes I do a full meal prep (breakfast, lunch & snacks), other times I meal prep for a few days ahead. Sometimes I do fancy breakfasts and lunches, other times it’s simple yogurt + fruit for breakfast and veggies + beans + grains for lunch. It just depends on how much time I have on the weekend. Either way I make sure, I have prepped some meals for the work week ahead. Yesterday, I meal prepped all my breakfasts and lunches and for the work week ahead. These meals are for two people and took me two hours to prepare (So, that’s two hours I will save during my busy work week)😊 • So, why do I meal prep? 4 simple reasons: ✅ I know exactly what I am eating and I know it’s healthier than most take away foods; #nutritious ✅ I save at least $50-100 a week from not buying take away foods for breakfast/lunch/snack; #savings ✅ I reduce food wastage! Who said salads are boring? 🤪Made a colourful summer noodle salad with a creamy peanut sauce topped with some homemade crispy spiced chickpeas and a side of sweet soy tofu for dinner last night. It was delicious, nutritious and healthy 🥰 #yum Perfect for a Friday night in 🤩 • For the salad, I used zoodles, shredded carrots, cucumber, edamame and @slendier edamame noodles. I usually use soba noodles for this salad but didn’t have any in my pantry, so I had to improvise 😊 • For the spicy creamy peanut sauce, I used @mayversfood peanut butter, minced garlic, @sriracha_fg hot sauce, soy sauce and maple combined with some hot water to get the dressing to my preferred consistency. • For the crispy spiced chickpeas, I mixed some cooked @grainslegumesnc chickpeas with some @cobramestate olive oil, garlic powder, chilli flakes, dried mixed herbs and @san_elk veggie stock (or salt) to taste and #airfried in my trusty Airfryer - but you can bake in the oven too. • For the sweet soy tofu, I marinated some firm tofu with some soy sauce and maple syrup and air fried in my Airfryer -but you can bake or pan fry them 🙂 • And there you have it, a simple yet nutritious #dinneridea with lots of veggies and #plantbased 🥰 #veganrecipes #eattherainbow #absaremadeinthekitchen #eatyourveggies

As you can tell from my food posts, I love making and creating healthier meals, desserts and snacks. So, I have decided to share my passion with everyone by teaching a vegan bliss balls class at @lanewaylearning . The class will be in Melbourne on 4 February 2020 and is only a little over an hour long and a lot of fun! I will share with you my 3 favourite bliss balls recipes (choc orange, choc mint & cherry ripe) as well as how to come up with your favourite bliss ball flavour combinations. Healthier banana bread for breakfast, anyone? I made this tahini and molasses walnut banana bread over the last few weekends of 2019 for breakfast and afternoon tea. It’s so delicious, we couldn’t stop at one 😅 I made it with wholemeal flour, so it’s packed with fibre. But you can also use normal or spelt flour. And it’s naturally sweetened with ripe bananas & freshly squeezed orange juice as well as some molasses and honey. It’s packed with good fat from the tahini and walnuts I used, so it will keep you fuller for longer. And I added some choc chips, so it feels like a decadent banana bread🍰 Full recipe below👇👇👇 • Banana bread served on my ceramic plate that I made at @sarahschembri_ceramics hand building workshop ❤️ Love love Sarah’s ceramic classes 🤩 • • • *Ingredients 🍌300g mashed bananas (3-4 large ripe bananas) @australianbananas 🍌3 heaped tbsp molasses 🍌2 tbsp honey 🍌2 eggs @australianeggs 🍌75g tahini @mayversfood 🍌2 tbsp olive oil/coconut oil @cobramestate 🍌150g Greek yogurt @aldiaustralia 🍌Juice of a lemon or orange (1/3-1/2 cup) 🍌1 tsp ground cinnamon 🍌1 tsp ground mixed spice 🍌2 tsp baking powder @mckenziesfoods 🍌250g wholemeal spelt flour @grainslegumesnc 🍌60g walnut @walnutsaustralia 🍌60g dark chocolate chips @nestle *Method 🍌Preheat oven to 180 degrees Celsius and line a bread loaf tray with baking paper or grease with some olive oil 🍌In a large bowl, mix the mashed bananas, molasses, honey, eggs, tahini, olive oil, yogurt and lemon/orange juice until well combined and mixed through thoroughly 🍌In a separate bowl, mix the ground cinnamon, mixed spices, baking powder, flour, walnuts and chocolate chips until well combined 🍌Add the mix dry ingredients to the wet mixture and mix until well combined 🍌Pour the bread batter into the prepared tray and top additional sliced banana or sesame seeds 🍌Place in the oven and bake for 70-80 minutes or until a skewer comes out clean 🍌Once baked, allow to cool and enjoy with a cup of tea or coffee. Veggie packed chicken burgers with some airfried sweet potato fries anyone? When I make burgers, I usually try and pack as much veggies as possible in my burgers without ruining the burger taste. In this burger, I included zucchini, carrots & onions 😊 You can also add mushrooms, capsicums/peppers, baby spinach and fresh herbs. White beans such as pinto or cannelinni beans are also great additions to this burger 🍔 So, it’s great for meeting my 5 serves of veggies a day. It also works well if you have picky eaters in your family who don’t like vegetables. In my burger buns, I included some avocado as the spread & baby spinach for added veggies and drizzled with some bbq and sriracha sauce.
