A little late but happy new year, everyone. I am ready to get back into my routine after a little holiday in picturesque Tasmania โ˜บ๏ธ It was nice to get away to recharge for the year ahead.
Easy lighter tiramisu ๐Ÿฎ Perfect for your morning or afternoon tea or even dessert. The filling is made with Greek yogurt and cottage cheese, so itโ€™s packed with protein to keep you full and satiated longer. Spiced pumpkin, quinoa & 4-bean salad with a creamy pesto dressing. This is one of my favourite summer salads so far! I love the sweetness and crunchiness of the pumpkin and how well the pesto dressing goes with the whole salad โ˜บ๏ธ This salad is also packed with complex carbohydrates from the pumpkin, quinoa and beans, protein from the quinoa, beans & cottage cheese in the dressing & healthy fats in the pesto. Easy & delicious sweet potato and chickpea burger ๐Ÿ” I have been making these burgers for the past few weeks as they are soooo delicious and easy to make. They are packed with fibre, complex carbohydrates and protein and make the perfect dish for #meatless Mondays ๐Ÿคค These burgers are also #glutenfree and vegan, so most of us can enjoy them ๐Ÿ˜ I have these burgers in @aldiaustralia lower carb high protein burger buns as they are so filling and I love the taste of the buns!
