Dinner tonight is a bowl of satisfying goodness. I stir fried some #kale with garlic & desiccated coconut (@mckenziesfoods ), made a 4 bean Mexican salad and some pan fried garlicky lime chicken strips. The star of this dish is my bean salad - I used chickpeas, kidney beans, fava beans & cannelinni beans for the beans, added some fresh tomatoes & sun dried tomatoes, fresh chilli, olive oil and freshly squeezed lime juice 🀀🀀🀀 Full recipe of the bean #salad is below πŸ‘‡πŸ‘‡πŸ‘‡ β€’ β€’ β€’ **Ingredients 1.5 cups of your favourite cooked beans (@mckenziesfoods ) 15-20 cherry tomatoes, quartered 3-5 sun dried tomatoes, finely chopped 1 fresh chilli, finely chopped (I used 1/2 birds eye chilli & 1/2 green cayenne pepper) 1/2 tbsp olive oil 1-2 tbsp freshly squeezed lime juice **Method In a bowl, mix all the well about ingredients well. Enjoy with your favourite protein or simply by itself 🀀🀀🀀 Serves 2 #dinnertime #healthydinner
No, we didn’t go to a fancy restaurant for dinner for #valentines Day. It was just another day for us. But I did make a delicious dinner of my ancient grain #salad with my homemade chicken schnitzel. It was the perfect combination of complex carbohydrates and protein. You can find the recipe of my ancient grain salad on my blog (click on the link in my bioπŸ‘‰πŸ‘‰πŸ‘‰). The recipe of my chicken #schnitzel is below. It only took 10 minutes to prepare and my trusty oven did all the cooking for me πŸ˜…πŸ˜…πŸ˜… And no, I didn’t need to use egg or flour to dip the chicken in to make it extra crispy, just bread crumbs 🀀 β€’ β€’ β€’ ***Ingredients *For the chicken 650g chicken breast, sliced thinly length wise 1 tsp veggie stock (@san_elk ) 2 garlic cloves, grated 2 tsp dried mixed herbs 2 tsp olive oil (@cobramestate ) *For the crumbs 1/2 cup of your favourite bread crumbs 3 heaped tbsp nutritional yeast (@terramadreorganics ) 1/2 tbsp dried mixed herbs Pepper to taste ***Method Preheat the oven to 170 degrees Celsius and grease a baking tray with olive oil. In a bowl, mix all the chicken ingredients together with the chicken until well combined. In a separate bowl, mix all the crumb ingredients until well combined. Then, coat each chicken piece in the crumb mixture. Make sure you press the bread crumbs into the chicken firmly to avoid the crumbs from falling apart when they are placed on the baking tray. Place the crumbed chicken on the baking tray and place in the oven. Bake for 15-20 minutes or until golden brown, then turn the chicken over and cook for a further 15-20 minutes or until golden brown. Enjoy πŸ˜‹πŸ‘…πŸ€€ Serves 4 #madewithlove
Made this kale, kidney beans and peas dhal for #meatless Monday a couple of nights ago. Dhal is an Indian/Sri Lankan term for dried pulses/lentils and typically eaten cooked in a soup/curry which we eat with rice, thosai, idli or #roti. I had my dhal with quinoa. And I spiced my dhal up with ground cumin, garam masala, curry powder, turmeric, vegetable stock (@san_elk ) & coconut milk (@sogoodau )and then added carrots, peas, kale and kidney beans for more protein and fibre. I then fried up some onions, garlic, curry leaves, cinnamon sticks, aniseed, cloves and cardamom in coconut oil until the onions were caramelised and added this to the dhal. This resulted in a freaking delicious #dinner 🀀 I also garnished with some toasted coconut chips (@mckenziesfoods ) and cashews (@lucky.nuts ). Oh, I also made this in the pressure cooker, so it only took me 20-25 minutes to make in total rather than an hour so hovering around the stove waiting for the lentils to cook πŸ˜… #hacks What’s your go to meatless dish? #madewithlove

You make a healthy peach and ginger #crumble of course πŸ˜‹πŸ‘…πŸ˜‹ Perfect way to finish off a wonderful weekend πŸ₯° This crumble will also make the perfect dessert for #valentines day this week β€οΈπŸ’•πŸ˜ Recipe below πŸ‘‡πŸ‘‡πŸ‘‡#zerowaste β€’ β€’ β€’ ***Ingredients *For the filling 3-4 peaches (or any of your favourite fruit), sliced 1 tbsp currants/sultanas 1 tbsp chopped dried ginger 1/2 tbsp coconut sugar 1/4 tsp ground ginger 1/4 tsp ground cinnamon *For the crumble 2 tbsp rolled oats 1 tbsp @mckenziesfoods desiccated coconut 1 tbsp psyllium husk/ground flaxseed 1 tbsp @lucky.nuts cashews (or your favourite nut/seed), chopped 1-2 tsp coconut sugar Dash of ground cinnamon 1/2 tbsp coconut oil at room temperature ***Method Preheat the oven to 170 degrees Celsius and grease 2 ramekins with olive oil. In a bowl, mix all the filling ingredients until well combined. Pour the mixture evenly into the prepared ramekins. In a bowl, mix the crumble mixture with your fingers and make sure you rub the coconut oil into mixture. Then transfer the crumble mixture evenly on top of the filling in both ramekins. Place the ramekins in the oven to bake for 15-20 minutes or crumble is golden brown Enjoy πŸ‘…πŸ‘…πŸ‘… It goes well with coconut ice cream too πŸ˜‹ Serves 2 #madewithlove
